Zucchini Recipes

I have some really good zucchini recipes to share today. I made a casserole that was really good.
Zucchini Casserole
All you do is peel and slice one medium size zucchini and layer on bottom of a casserole pan. Salt and pepper, pour cream over then add shredded cheese. (3 cheese blend) then add some bread crumbs. Repeat the layers until you have used all your zucchini slices. Dot with butter and bake at 375º for 40 minutes.

Then I made some zucchini bread. YUM!!! Here' s the recipe...

Zucchini Bread
Beat 3 eggs. Add 2 cups sugar, 1 cupe cooking oil, 3 tsp vanilla, 2 cups peeled and shredded zucchini. Mix well then add 3 cups flour, 1 tsp. salt, tsp. soda, 1 tsp baking powder and 1/2 cup chopped nuts.
Bake for 1 hour at 350º

June 29 and all is well!

Not much to blog about. I'm getting the things on my summer to do list done. Today, I have to take Mom to Joplin for a chemo treatment, so won't get much more accomplished than that. Don't have any plans for the 4th of July weekend. Gee! sounds pretty boring around here.
However, I am looking forward to Katy coming home for a visit. Oh yeah, Chloe too. Wow! is she getting big.

Oh, I am having fun with my new computer though. I've composed my first song (it's pretty weak) in Garage Band and have imported it into my iTunes. Now I can put it on my iPod and listen to it while I ride my bike. he,he,he!!! I'm rolling my eyes!

Another little piece of software I'm having a lot of fun with is Photo Booth. I'm like a little kid playing with all the different effects and taking pictures of myself. Here, I'll even show you some.Light Tunnel

Another successful gourmet club meeting! (or should I say eating...)
Wish I had more pictures to post. Our menu last night included excellent filets, the best fried potatoes and onions ever, as well as fresh green beans and a delecious green salad. I even made fresh French bread (as shown below). Not only was the meal outstanding, we also had homemade ice cream for dessert!! Wish I had a picture of that.
If anyone is interested, here's the recipe for the French bread.
Combine the following ingredients:
1/4 cup sugar
1/8 cup oil
2 tsp. salt
Pour 2 cups boiling water over and let cool.
Dissolve 2 pkgs or 2 Tbsps yeast and 1/2 tsp of sugar in 1/2 cup lukewarm water. [Adding just a pinch of sugar when you dissolve your yeast is my little secret I use in all my yeast recipes. You probably won't see that in any bread recipes out of a book.]
Combine all ingredients with 6 Cups flour while lukewarm so as not to kill the yeast. [Another little secret tip----don't add all 6 cups of flour at once. Start with about 4 cups, stir well and when the dough starts to get too stiff to stir, flour your hands and knead in the rest of the flour. In fact, I don't always use the whole 6 cups of flour. It just depends on how the dough feels. If it is fairly easy to handle and you have only use 5 1/2 cups flour, don't worry about adding the rest.]
Set aside and punch down every 15 minutes for 1 hour. If it's a little too sticky when you punch down, just flour your hands and the dough won't stick to them.
Roll and shape into 2 loaves, slash tops and place in well greased and floured French bread pan or just place on a baking stone (no pan needed). Let raise about 45 minutes and brush with a mixture of 1 egg and 1/8 cup oil beaten together.
Bake about 20 - 30 minutes at 375 degrees. Enjoy!
