Danish Kringle

Well, I gave it a try. I attempted to make a Danish Kringle. This is the recipe I liked the best. I think it's one of the easiest. Here's the recipe and pictures of the results.

Kringle Recipe

Yeast Dough Ingredients
1 Pkg yeast 1/2 Cup cold butter
1/4 Cup warm water (110º) 2 Cups all-purpose flour
1/2 tsp salt 1/2 Cup warm milk (110º to 115º)
1 egg beaten 1 Tbsp sugar

Nut Filling Recipe Glaze Recipe
1 1/2 Cups finely chopped pecans 1 Cup powdered sugar
1 Cup firmly packed brown sugar 4-5 tsps water
1/2 Cup butter (room temperature) 1/2 tsp pure vanilla extract
Mix all ingredients thoroughly.

The dough
In a small bowl, dissolve yeast in warm water.
Mix flour and salt in large bowl. Using a pastry blender cut the cold butter into flour and salt mixture until particles are the size of small peas. Add yeast mixture, sugar, warm milk, and egg. Beat until smooth (dough will be very soft). Cover and refrigerate at least 2 hours but not more than 24 hours.

When ready to use, remove from refrigerator, punch down dough and divide in half. Return the other half to refrigerator. On a well-floured surface, working quickly, roll into a 15 x 10 inch rectangle, about 1/4 to 1/2 inch think. (If dough gets too warm from handling, return to refrigerator)

Spread half of the prepared nut filling down the center of the rolled-out dough rectangle in a 2 inch strip. Fold sides of dough over filling, overlapping 1 1/2 inches; pinch edges to seal.

Form roll into a circle and pinch ends together. Place seam side down on a large greased baking sheet. Repeat same process with remaining dough and filling. Cover and let rise in a warm place for 30 minutes or until double in size.

Preheat oven to 375º. Bake for 20 minutes or until golden brown. Remove from oven and let cool for 15 minutes.

Spread Glaze over Kringles. Sprinkle with chopped pecans.

Haddon Thomas DeMoure's 3rd Birthday

Haddon turned three November 17. He wanted his birthday party at Grandpa and Grandma's, and as you can see he had quite a time. He was so excited he didn't eat his cake and ice cream. Oh yeah, I think he finally ate half of a cupcake. He sure had a good time. He couldn't believe he got just about everything he asked for. 

We finally got all five grandkids in one place at the same time just long enough to snap a photo. It isn't the best, but at least you can see them all.

A New Experience

I survived my first night of a brand new teaching experience for me: teaching technical writing to  Harley Davidson tech students at the Harley Davidson tech center in Frontenac. I think I'm going to like it. I know technical writing isn't the most exciting subject for these students. It's a requirement and they just want to pass the class, so I promised I'd make the class as painless as possible and still teach them something useful. Now the challenge is keeping my promise, especially the part about teaching them something useful. Seventeen students showed up out of  23 that were on my roster; pretty good class size. Two of the students are female and two are older than I am (I think they are anyway). One young man is not a Harley student. He's in the military and doesn't get deployed until January, so he is taking the class to get some college credits before he possibly goes to Afghanistan in January. He's not sure exactly where he will be sent yet. The rest are, of course, 18-21 year old boys, (enough said!!) It ought to be interesting. One thing for sure though, it's not going to be be boring.

Rolling Dough Tip!!!!

Our gourmet group got together Saturday night to try a new recipe from the food network.
I made the dough which had to be rolled into a rectangle. Always in the past my rectangle of dough looked more like a splat than a rectangle. Accidentally, I discovered the best way to roll the dough into a near perfect rectangle is to chill it first in the refrigerator.

I made my dough a little too early so I put it in the refrigerator to slow the rising. When I took it out after two hours in the 'fridge and rolled it a few times, I noticed how easily it was taking the shape of the rectangle. I will do this from now on!!!! Great Tip, I think. I can't wait to try it again.

And here's what the dough looked like after it was stuffed with ham, mozzarella cheese, and fresh spinach.Wish I'd remembered to take a picture of it when it came out of the oven. It was delicious.

Mamma Mia!! The Movie




Ok, Ok, I know not a one of these actors is going to win any singing awards, but the movie was fun. I really enjoyed it. I like Abba music and there were some really funny scenes even during the dancing and singing. I know most men aren't going to feel the same, but maybe some of you gals might want to consider this movie for a girls night out!! The Big Weekend!

I'm getting ready for the big weekend at the Great Wolf Lodge in Kansas City. The kids and grandkids are going to be there and we will be celebrating Izzy's first birthday. I just finished making cupcakes and a little bitty cake just for Izzy to dive into at her party on Saturday at Grandma Bonnie's and Grandpa Joe's. Hopefully, I will have lots of pictures to post. (You know how I like to post pictures)

I'm really looking forward to getting away. I've never been to the Great Wolf Lodge...
I will check in on Monday and let you all know how it went.

This Wind is Driving Me Nuts!!!!

I'm so tired of wind. The last two days we've been picking up large twigs and small limbs out of the yard. My back hurts. It is supposed to storm again tonight. We already had a humdinger of a storm Tuesday night. Jerry had to work most of the night because of downed lines and power outages. It's supposed to be bad again tonight, so I'm preparing my "fraidy hole", my walk-in closet,  just in case. Some things never change no matter how old you are. 

If it ever quits raining and blowing, I have plans to ride my new bike to Pittsburg. I bought a helmet the other day and the guy at the bicycle shop helped me map out my route so I don't have to ride on any highways. Now, I just have to have the right conditions. That means no 50 mile per hour wind. I didn't even attempt to ride today. Golly, I almost got blown away in the car this afternoon.


It's much calmer this evening, so far!

School's Out!!!!

Yippee! Don't mean to rub it in, but I have the next two and one fourth months free.
I bought a new bicycle last month and plan to do a lot of riding and a lot less driving. Saving gas and hopefully getting in shape is my goal. I rode my bike to work the last week of school. The only problem was I had to be careful what I wore so I didn't get pant legs caught in the chain.

Jerry and I are going to KC this weekend to babysit. That should be fun. Then in two weeks we are going to THe Great Wolf Lodge for Izzy's first birthday.

Oh yeah, I almost forgot. Here's a picture from our last get together (not counting the home made ice cream night). I made pizza. What do you think!!! The marinara sauce turned out pretty good too. I'll have to keep track of what all I put in it last time so I can write it down.

Long John Silvers Cole Slaw Recip

I finally found it. Here's LJS cole slaw recipe. I will let you know how it turns out when I try it.

Long John Silvers' Coleslaw

8 cups very finely chopped cabbage (1 head)
1/4 cup shredded carrot
2 tablespoons minced onions
1/3 cup granulated sugar
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup milk
1/2 cup mayonnaise
1/4 cup buttermilk
1 1/2 tablespoons white vinegar
2 1/2 tablespoons lemon juice
1. Be sure that the cabbage, carrots, and onion are chopped up into very fine pieces (about the size of rice kernels).
2. Combine the sugar, salt pepper, milk, mayonnaise, buttermilk, vinegar, and lemon juice, and beat until smooth.
3. Add the cabbage, carrots, and onions. Mix well.
4. Cover and refrigerate for at least 2 hours before serving. serves 8
The critical part of this cole slaw recipe is the flavor-enhancement period prior to eating. Be absolutely certain the cole slaw sits in the refrigerator for at least a couple of hours prior to serving for the great tasting slew of slaw.

Grandkids Visit!!!

Now that things have slowed down a bit maybe I can update this blog a little more frequently. For all family members who check this out from time to time, here's some new pictures of the grandkids. Jan and Katy were both here last weekend with the kids. Was it ever wild around here. We don't need to down size as I had thought at one time. We need to add on!!!!! One big playroom would be nice! It's hard for me to believe I will soon be a grandmother of five.
