Mildred's Sweet Dough Bubble Cake!!!

Here's a recipe my mother is somewhat famous for. Since we had an unexpected snow day and I didn't have to go to school, I thought I'd try it. I have never tried making a bubble cake before, not with Mom's exact recipe anyway.

It takes a awhile to do, but it is well worth it! Enjoy

Please read entire recipe before beginning this project!

1. Pour 2 cups warm water in a very large mixing bowl. I prefer stainless steel.
Sprinkle 2 Tblsps or 2 pkgs yeast and 1 tsp sugar over the water. Let stand about 10 minutes to make sure your yeast is working. It will be bubbly.
2. Meanwhile, sift 2 cups flour with 1 tsp salt. Add this to the yeast and water mixture and mix well. Let that stand about 1 hour. It will really be bubbly by then.
3. Next, add all at once, 2 sticks melted butter, 2 eggs, 1 cup milk, 1 cup sugar and another tsp of salt. Beat by hand thoroughly.
4. Now you are ready to start adding flour until dough is fairly stiff. I use a little over, sometimes a little less, 6 cups of additional flour to make the dough stiff enough so I can knead it for a few minutes. When all the flour in the bowl is kneaded into the dough, spray with cooking spray and cover with waxed paper and let raise until double in size. About an hour. (you are now half done)

To make bubble cake:

1. Melt 2 sticks butter or oleo.
2. Make a brown sugar/cinnamon mixture- 2-3 cups of Brown sugar + 1/8 cup Cinnamon.
You just have to mix the brown sugar and cinnamon to your taste. After you've made a few you'll know.
3. Grease, with butter, 2 angel food cake pans. Melt some butter in the bottom of each pan and add some of the brown sugar mixture and sprinkle with pecans.
4. Pinch off golf ball size pieces of dough (as shown in picture) and roll in melted butter, the brown sugar/cinnamon mixture and then put the well butter greased angel food cake pan.
5. Put 25 - 27 balls each pan. Let raise in pan for about 45 minutes or until dough has raised to top of pan.

Bake at 375 for 45 minutes. You can turn them out as soon as they come out of the oven.

3 sticks oleo or butter
1 cup sugar
1 cup milk
2 cups water
2 eggs
2 or 3 cups brown sugar
1/8 cup or a little more cinnamon
pecans
