What To Do With Those Pesky Cucumbers

Okay, I really like cucumbers, and I really like Armenian cucumbers, but what do you do when the cucumber crop gets out of hand. I try to share with as many friends as possible, but not everyone likes them. I really don't want to make pickles because I'm just too lazy to gather all the equipment needed and I'm just too lazy to spend the time doing it.  However, I have come up with a few ideas; some original and some not:

1. slice the cucumbers and pour Hendrickson's Original Sweet Vinegar & Olive Oil over them. Let set for an hour and then enjoy. This dressing is delicious and it is also fat free, preservative free, and gluten free..
2. chunk the cucumbers with some fresh chopped tomatoes and add a little salt, pepper, and just a tad of sugar. This is a very good lettuce-less salad. 
3. use the slice cucumbers to put on your favorite sandwich. I put it on my bacon and tomato sandwich today, and it was very tasty.
I think I could eat cucumbers on just about any sandwich.

Armenian cucumber. They are very crisp and have
fewer seeds than the traditional.
4. replace crackers with cucumber slices when you want a cheese and cracker snack. I found the Laughing Cow Lite French Onion flavor is really good with cucumber slices.

These are just a few ideas I've tried and have found to be pretty tasty. If you know of others, please leave a comment. I need all the help I can get doing something with Those Pesky Cucumbers.

Do You Like Brocoli?

If you like broccoli, you might be interested in this little tip. I waste as little of the plant as possible. The flowerets I like to roast in the oven, but the stalks I peel and make broccoli sticks. They are very tender, crunchy, and tasty.

I'm a fan!


Teaching is NEVER boring.......

I've taught for over 32 years, and I can honestly say, "I've never been bored." This week my seventh grade English class has been doing a "Myself" unit. Yes, that is just what it sounds like. Every activity they do revolves around them. This is a great project to do before an upcoming school vacation, e.g spring break in this case. One of the first activities is a categorizing assignment where they are to list at least ten items in each of four categories: ten adjectives that describe them, ten activities they enjoy, ten things that make them blue, and ten favorite people, places, things, or moments. While we were sharing our lists I asked if anyone wanted to share anything from the ten things that make them blue. One young man raised his hand and very seriously stated, "No oxygen".

He's right!
